1 tsp. vegetable oil
1/2 cup onion, chopped
1 clove garlic, chopped
2 cans (14 1/2 oz. each) reduced salt chicken broth
1 can (28 oz.) crushed tomatoes
1/3 cup alphabet pasta
1/2 cup parsley leaves
1 cup broccoli, chopped
1 cup carrots, chopped
1 cup celery, chopped
Salt and Pepper to taste
Directions:
1. Heat oil in saucepan over medium heat. Add onion and garlic. Cook until onion is soft, about 2 minutes.
2. Add chicken broth, tomatoes, pasta and parsely. Bring to a boil, reduce heat and simmer for 10 minutes.
3. Add broccoli, carrots adn celery to soup. Cook for 10 minutes.
4. Salt and pepper to taste.
Serves 6.
